Moroccan pasta
Hey
everyone today i will post a special recipe not everyone knows it even Moroccans. I like to call it Moroccan pasta because it’s a pasta but in a Moroccan way.
Measurements
depends on the quantity you want to make, for a half chicken I used ½ teaspoon
of each spice except salt I didn’t use any because in morocco we wash chicken
with a lot of salt so for you, you can add salt depending on how much salty you
want your pasta to be as for the garlic 2 cloves and a 1 grated onion and a half
preserved lemon also a tablespoon olive oil.
So
for that you will need:
CHICKEN
PASTA
SPICES:
SALT /CURCUMA/GINGER POWDER/BLACK PEPPER/RAS EL HANOUT (a Moroccan spice like
the Indian GARAM MASALA)
PRESERVED
LEMONS
MINCED
GARLIC
GRATED
ONION.
OLIVE
OIL
WATER
PREPARATION:
Boil water in a large pot. To make sure pasta doesn't
stick together.
Salt the water with at least a tablespoon more is fine
and a bit of olive oil. The salty water and olive oil adds flavor to the pasta.
When cooked Test the pasta by tasting it, if good Drain
the pasta.
Meanwhile in a pressure cooker add the chicken/the spices/onion
and garlic/olive oil/preserved lemon, and pour the water till the chicken Is
half covered.
Let it cook in medium heat until the water lessens and the sauce
becomes ticker. The chicken also should be cooked if not add more water and
cook a bit more.
Now when everything is ready put the chicken in a plate
and pour the sauce over the pasta bit by bit while mixing, if there is too much sauce don’t use it all. Now your pasta is
ready and it’s ready to be served.
